Ingredients

1 pkg (8 oz) Wegmans Golden Jewel Blend, cooked per pkg directions

1 container (16 oz) Campari Cocktail Tomatoes, cored

2 Tbsp Extra Virgin Olive Oil, divided

1 onion, peeled, halved, sliced (about 2 cups)

1 pkg (1 lb) Carrots, peeled, cut on bias in 1/2-inch pieces

2 cups Cleaned & Cut Butternut Squash, 1-inch dice

1 1/4 tsp Garam Masala Blend

1/2 tsp Organic Ground Cumin

1/2 tsp Ground Vietnamese Cinnamon

1/4 tsp Turmeric

1/2 tsp Ground Ginger

2 tsp salt

2 cups Vegetable Broth

1 can (7.5 oz) Garbanzo Beans, drained

1 pkg (12 oz) Cleaned & Cut Cauliflower Florets

3 cloves Cleaned & Cut Peeled Garlic, minced

1/2 of a 10 oz pkg Cleaned & Cut Tuscan Kale

1 container (.25 oz) Mint, finely chopped

1 container (.25 oz) Cilantro, finely chopped

1 container (.25 oz) Italian Parsley, finely chopped

1/2 cup Salted Roasted Almonds, chopped

Directions

Score tomatoes with "x" using sharp knife on end opposite stem. Add to large pot of boiling, salted water. Blanch 15 sec; drain. Transfer to bowl of ice water; drain. Peel skins; discard. Quarter tomatoes; set aside.

Heat 1 Tbsp oil in large braising pan on MED-HIGH. Add onions; cook, stirring, 6-7 min, until caramelized. Remove onions; set aside.

Add remaining oil, carrots, butternut squash, Garam Masala, cumin, cinnamon, turmeric, ginger, and salt to pan. Reduce heat to MED-LOW; cover. Cook, stirring occasionally, 15-18 min.

Add broth, garbanzo beans, cauliflower, caramelized onions, and garlic; stir to combine. Increase heat to HIGH; bring to boil.

Cover; reduce heat to MED. Cook, stirring occasionally, 10-12 min.

Add kale, tomatoes, mint, cilantro, and parsley; stir to combine. Cover; cook, stirring occasionally, 10 min.

Arrange cooked golden jewel blend on large serving platter, leaving center empty. Mound veggie mixture in center; garnish with almonds.

Chef Tips: For more flavorful grains, use remaining 2 cups vegetable broth in place of water when cooking Wegmans Golden Jewel Blend. For an authentic taste, try adding 3/4 cup golden raisins or sliced dried apricots.
